Roasted veggie sandwich

I love sandwiches. This definitely beat out my go-to PB&J. I bought a lot of wonderful veggies at the grocery store and thought this would be a great way to use them.

  • 1 eggplant
  • 1 squash
  • 1 zucchini
  • 1 green bell pepper
  • 1 yellow onion
  • Hummus
  • 1 loaf of bread
  • Olive Oil

Preheat the oven to 350 degrees. Grease 2 baking sheets with oil. Chop the eggplant, squash, and zucchini and place on the baking sheets. Cook for 10-12 minutes.

Meanwhile, heat olive oil in a pan and chop the onion and bell pepper. Saute until the onions become translucent.

Toast the bread and spread the hummus on each side. Layer the eggplant, squash, and zucchini, then top with bell peppers and onions.
