This recipe is so easy and it made my kitchen smell amazing! You bake it in the oven, but it really reminds me of an omelette fused with lasagna, so you can put any kind of ingredients you want, but this is how I made it.
- Butter or cooking spray
- 1/2 cup uncooked quinoa
- 8 eggs
- 1 1/4 cups milk
- 1 tablespoon chopped garlic
- 1 teaspoon chopped thyme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups baby spinach
- 1 cup sliced mushrooms
- 1 cup freshly grated Parmesan cheese
Preheat oven to 350 degrees Fahrenheit. Grease 8 by 8 inch baking dish with butter or cooking spray.
In a large bowl, whisk eggs, milk, garlic, thyme, salt, pepper, and quinoa. Stir in spinach then pour mixture into oiled dish. Cover with foil and shift gently so quinoa settles in the bottom to form a crust. Bake about 45 minutes, remove foil and sprinkle with grated cheese. Continue to bake, uncovered, until golden brown, about 15 minutes more. Let cool and serve!
