Veggie bake

  • 1 small eggplant
  • 1 zucchini
  • 1 yellow squash
  • 3 tomatoes
  • 1 teaspoon thyme
  • salt and pepper

Preheat oven to 375 degrees.

Slice your vegetables into even slices so they resemble the photos above. Arrange the vegetables in a shingled pattern in a baking dish, working from the outside of the dish toward the center. When all vegetables are arranged in the dish, drizzle with olive oiland sprinkle with chopped thyme.

Season with salt and pepper and bake in the oven for 15 minutes.

*I had some fresh grated Parmesan that I wanted to use, so I also sprinkled some over the top before baking.
