- 4 Medium Zucchini
- 1 1/2 Cups Ripe Grape Tomatoes, Sliced In Half
- Salt & Pepper
- Red Hot Pepper Flakes
- 1/4 cup Olive Oil
- 1/4 cup Balsamic vinegar
- Fresh basil leaves
So fresh and light! My favorite part is the red hot pepper flakes that give it that special kick. Serves as a perfect accompaniment with any main dish.
Slice the zucchini. Cut the tomatoes in half, add them to the bowl with salt, pepper, and red pepper flakes. Add the olive oil and balsamic vinegar;toss well. Stack a few of the basil leaves, roll them and slice. Let sit 5 minutes then serve!
