Tortilla soup

I got this recipe from my aunt, who makes this a lot when our family gets together for dinner because it’s so easy to prepare.

If you are making this soup for multiple people, you will want to double the recipe. But since I was making it for myself, I used fewer cans of beans, chicken stock, etc. I basically used whatever I had available at the time, but you can add or remove any ingredient according to your taste.

The ingredients I used were:

  • 1 can corn
  • 1 can black beans
  • 1 can pinto beans
  • 1 can diced tomatoes
  • 1 can chicken stock
  • 1 can hominy
  • shredded cabbage
  • avocado
  • fresh cilantro
  • salt and pepper

Put corn, black beans, pinto beans, diced tomatoes, chicken stock, and hominy into a pan and bring to a boil. Reduce heat to a simmer, then add lettuce, cilantro, salt, and pepper. After 10 minutes, serve into individual bowls and add a few slices of avocado.

You can get fancy and make your own tortilla strips by baking corn tortillas, or buy some chips to add to the soup. But this is just a simple, go-to meal that you can make with what’s usually stocked up in your pantry. Enjoy!
