I saw this recipe online and I was a little intrigued. The cookies actually have the texture of muffins, so they’re moist but you can dip them in milk like cookies!
- 1 cup whole wheat pastry flour
- 1 cup all-purpose unbleached flour
- 1/3 cup granulated sugar
- 1/8 cup canola oil
- 1/2 cup unsweetened applesauce
- scant 1 cup pumpkin puree
- 1 egg
- 3 tablespoons milk
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon vanilla extract
- 1/2 cup chocolate chips
Preheat oven to 350 degrees and grease a cookie sheet. In a large bowl, combine flours, baking powder, baking soda and salt.
In a small bowl, combine sugar, oil, applesauce, pumpkin, egg, vanilla and milk. Add wet ingredients to dry and mix to combine. Fold in chocolate chips.
Drop by heaping spoonful on cookie sheet and bake for approximately 10 minutes, until edges start to brown. Remove from oven and let cool a few minutes before transferring to a cooling rack.
