Parmesan baked tilapia with zucchini chips

Yum, yum, and YUM! My mom (lover of all things chicken) really enjoyed this meal. If I can get her to eat fish, I’m happy! This meal so so light but so delicious and can be made within 20 minutes. Can’t hear anyone complaining how they don’t have enough time to cook when there are recipes like this laying around! Once again, I was able to overlap some of the ingredients by using the Parmesan for both the fish and the zucchini chips. Waste not!

If you plan ahead, you can put these in the oven at the same time and they will be ready to be served together straight out of the oven! Trust me, you will want to dig in as soon as possible. (I know I did!)

Tilapia

  •  3/4 cup freshly grated Parmesan cheese
  • 2 teaspoons paprika
  • 1 tablespoon chopped flat-leaf parsley
  • 4 tilapia fillets (about 1 pound total)
  • 1 lemon, cut into wedges

Preheat the oven to 400 degrees . In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.

Zucchini chips

  • 2 medium zucchini, sliced thin
  • 2 tablespoons kosher salt
  • 1/3 cup bread crumbs
  • 1/4 cup Parmesan cheese, grated
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons milk
  • Non-stick spray

Preheat oven to 450 degrees.

Add zucchini and salt to a colander, toss well. Let sit for 15 – 20 minutes. Press out any extra water and then rinse very well under running water.

Add zucchini to a bowl with milk and toss well. In another bowl, add bread crumbs, Parmesan cheese, onion powder, garlic powder, dried basil and dried oregano. Add zucchini and toss in breadcrumb mixture, coating each side.

Spray a nonstick baking sheet with non-stick spray. Place zucchini chips in a single layer on sheet and spray the tops of the zucchini with non-stick spray.

Bake for 5 – 7 minutes and then flip, and bake for 5 – 7 minutes more.
