If you have ever thought about substituting lean turkey meat for ground beef, this recipe is the perfect opportunity to try it out. Your taste buds will hardly know the difference!
Another great thing about these turkey tacos is that they make a perfect weeknight meal. The preparation time only took 20 minutes.
- 2 tablespoons corn oil
- 1 medium onion, chopped (1 cup)
- 2 cloves garlic, chopped
- 1 1/2 tablespoons chili powder
- 1 teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- 3/4 pound ground turkey
- 1/3 cup vegetable broth
- Cheddar cheese, shredded
- Flour tortillas
Put the oil, onions, garlic, and spices in a medium skillet, season with salt and cook over medium to medium-low heat, stirring occasionally until tender, about 5 minutes.
Increase the heat to medium-high, add the turkey and cook for about a minute, stirring to cook the turkey evenly. Add the vegetable broth, bring the heat down to low so the mixture simmers until the turkey is cooked through and the mixture thickens but is not dry, about 12 minutes.
Prepare your tacos to serve by transferring the mixture to a large bowl. Put the fixings (spinach, cheese, avocado, flour tortillas) on individual plates. I also served with corn, but feel free to use the toppings and sides of your choice!
