If you’re like me, you could probably use a few extra servings of veggies in your daily diet. I’m all about making vegetables the main part of my meal but also being delicious and filling at the same time. I also love me a good sandwich!
- 2 slices of bread
- 1 zucchini
- 1 yellow squash
- 1/2 tomato
- 1 avocado
Cut the zucchini and squash lengthwise so the slices are about 1/4 inch thick.
Heat oil in a pan over medium heat and saute the zucchini and squash. Cook for 2-3 minutes, flip, and cook another 2-3 minutes.
Toast the two slices of bread. Slice the tomatoes. Spread the avocado over the two slices of toast. Layer the squash, zucchini, tomatoes, and sprouts and enjoy the wonderful medley of veggies in this warm, toasted sandwich!
