They are rich in beta-carotene, giving them five times the recommended daily allowance of Vitamin A in one sweet potato, as well as loaded with potassium. These nutrients help to protect against heart attack and stroke.
- 2 large sweet potatoes
- 2 ounces low fat cream cheese
- 2 tablespoons milk
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon
- 1/4 cup chopped pecans
Heat oven to 425 degrees. Cut potatoes lengthwise in half and place cut-side down on a foil-lined backing pan. Bake 30-35 minutes or until tender.
Scoop out centers of potatoes into a bowl and set aside the shells. Add cream cheese, milk, sugar, and cinnamon and mash until blended.
Fill shells with potato mixture, top with nuts. Bake an additional 8 minutes or until potatoes are heated through and nuts are toasted.
