Twice-baked sweet potatoes

Do you know how good sweet potatoes are? I’m not just talking about the taste! The are also good for your health. They are low in calories and fat. They are rich in beta-carotene, giving them five times the recommended daily allowance of Vitamin A in one sweet potato, as well as loaded with potassium. These nutrients help to protect against heart attack and stroke.

  • 2 large sweet potatoes
  • 2 ounces low fat cream cheese
  • 2 tablespoons milk
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped pecans

Heat oven to 425 degrees. Cut potatoes lengthwise in half and place cut-side down on a foil-lined backing pan. Bake 30-35 minutes or until tender.

Scoop out centers of potatoes into a bowl and set aside the shells. Add cream cheese, milk, sugar, and cinnamon and mash until blended.

Fill shells with potato mixture, top with nuts. Bake an additional 8 minutes or until potatoes are heated through and nuts are toasted.
