Asian pulled pork sandwich

This recipe has so much flavor and is so easy to make! The hardest part about this recipe is patience! You just have to do a little prepping, then let it sit in the slow cooker all day and try to resist the amazing smell. Definitely well worth the wait!

  • 2 tablespoons brown sugar
  • 1 ½ teaspoon salt
  • ½ pepper
  • ½ teaspoon ground ginger
  • 4-5 pound boneless pork loin, trimmed
  • ½ large red onion, cut into ½ inch thick slices
  • ¼ cup ketchup
  • ¼ cup low sodium soy sauce
  • ¼ cup hoisin sauce
  • 2 tablespoons honey
  • 3 garlic cloves, minced
  • ½ teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • ¼ cup brown sugar
  • Sesame buns

In a small bowl, combine 2 tablespoons of the brown sugar, salt, pepper and ½ teaspoon ground ginger. Rub mixture all over pork loin. (This can be done the night before. Wrap pork and refrigerate until ready to cook.)

Add onion slices in a large crock pot and place pork over onions. In a mixing bowl, mix together ketchup, soy sauce, honey, garlic and ½ teaspoon ground ginger. Pour mixture over pork. Cover and cook on low for 7-9 hours.

Remove pork from pot using tongs or a slotted spoon. Transfer to a cutting board and shred.

In a small bowl, stir together cornstarch and water. Add mixture to the sauce in the crock pot. Add ¼ cup brown sugar and stir to combine. Turn the crock pot up to high and continue to cook sauce, uncovered, for about 30 minutes, stirring occasionally.

Return pork to the crock pot, stir to combine and serve on sesame buns. I served with a slaw, made with cabbage and carrots tossed with one tablespoon of soy sauce and sriracha sauce.
