Sesame quinoa spring rolls

Warning: some assembly required. But that should not deter you from trying this recipe! It can take some getting used to if you have never used rice paper before, but once you do, it is very easy. And so worth it!

  • 1 cup quinoa
  • 1 1/2 cup water
  • 10 rice paper wrappers
  • Any sort of green/vegetable (I used cooked squash because it’s what I had in the fridge but lettuce or any vegetable would be fine)
  • 2 tablespoons rice vinegar
  • 4 tablespoons soy sauce
  • 1 tablespoon sesame oil

Rinse and drain the quinoa. Bring the water to a boil, add the quinoa and cook for about 12 minutes, until quinoa is fluffy.

While the quinoa cooks, combine the other ingredients in a bowl. When the quinoa is done, combine it with the oil/vinegar mixture. Then fill a bowl or pan with edges with water. Assembling the rolls one at a time, take one rice paper and soak it in the water until it softens. Spoon the quinoa mixture into the wrapper and fold the edges over, like a burrito, and set onto another place. Repeat the process until you have filled all the wrappers.

Serve with more soy sauce and sriracha sauce (yum!)
